My "signature dish" is in my creative process, and quite frankly, life as a mom has gotten the best of me the past two weeks. We've had those times as parents, right?! This recipe and video is soon to come!
This past week on NFNS was about a camera demonstration with a live audience, and fielding an unknown question. As always, The Man About The House was ready, prepared, and supportive. I didn't edit the video...it's a straight shot, but in 4 1/2 minutes, not 3. What can I say, this project is a learning curve, right?!
A few thoughts not on camera -
1. I like to layer chili - pasta/rice on the bottom, sauce, toppings. Of course, there's a variety of options! I love Chicago 5-way. This episode was minimal with options, mainly because of time restraints. Cheese, sour cream, chives, ....name your pick, and it's probably great on this versatile dish.
2. Replicating spices at all three levels continues that great layering and tasty effect. Don't be afraid to toast the rice in spices and oil before adding the liquid. The same applies to roasting the veges. Using the same spices as in the chili sauce is really the secret to my version of this classic family meal. I even roast the tomatoes when possible.
3. A great option to crackers is a flavorful crouton. They take 5 minutes...an easy and successful addition for that special touch!
Many of you voted about the 6 choices: pork chops and applesauce, lasagne, meatloaf and mashed potatoes, chicken stir-fry, shepherd's pie, and chili. My goal was to demonstrate any of these utilizing left-over items in the fridge and pantry. I really wanted to give a vegetarian option this week, since that is such a great culinary choice and a major preference of my famly these days. Thanks for your interest and input...
ps-I also had a difficult time feeling calm on camera because of the time restraints. I know this is an area to improve upon...
